To everyone else: So far so good. Its been boiling away on low for almost 2 days now. this is my second bowl and its pretty good.
dont have an exact recipe but: mushrooms carrots onions and potatoes, and 2 tenderloins.

Keep updating us! It seems like a worthwhile experiment. A steady, uninterrupted low boil is certainly going to keep the stew perfectly safe to eat.
As to flavor and texture, the more detailed your notes, the better. I’ll be very interested to hear when, in your view, the stew hits its peak, and how long it stays there.
The beautiful thing about Reddit is that your results can then inform others who are thinking about trying the same experiment (there will definitely be others) for decades to come.

I did a week long version of this a few years back. It was fun to transition to a chili-like stew halfway through (which also helped with getting bored of the food).
Is the meat not gonna turn to rubber from being overcooked?

At what point do you turn your house into a darkly lit tavern and welcome weary travelers from the road? Make sure you have room to check cloaks, staffs, and various assortments of broadswords, cudgels, crossbows, and knives.
Keeping it hotter than needed will turn it to paste.

I’ve been making this for years using a slow cooker. my longest was ~ 6 months.
If you do only meat it’s pretty easy to keep going but if you’re adding vegetables you might to need to strain it every so often.
I’ve had the one that’s been going for 50+ years in Thailand quite a few times when I lived there.
People talking about food safety here are pretty dramatic. I’ve eaten some extremely questionable things on my adventures and the only thing I’ve ever gotten sick from was frozen shrimp I bought from Safeway.
