Cooked up some beyond burgers and crumbled them with sautéed bell peppers, red onion, garlic, crushed tomatoes and some spices (oregano, basil and chillies flakes) to make the filling. Rolled out some puff pastry, cut into pieces stuffed with the filling, violife mozzarella and sealed with a fork. Baked at 400 for 10 min, took them out basted in garlic butter and added more mozzarella on top, baked another 10 minutes and garnished with fresh basil. So good.
