I pan fry my steaks on a Hexclad skillet on Medium. I put a thin layer of mayo on them after seasoning heavily, little avacado oil in the pan, and throw them on when I see smoke. Two minutes, flip, two minutes, then an extra 30-60sec on the fat side. Crust every time.
