INGREDIENTS
To Cook Dried Pasta till Al Dente(10-11 Mins)
5 Cups of Hot Water
2 Cups | 200g Dried Pasta (I used Barilla Penne Rigate)
1/2 Teaspoon Salt
Olive Oil, to Drizzle once Strained

For Chicken
200g Chicken breast, diced
1/4 Teaspoon Garlic powder
1/4 Teaspoon Onion powder
1/4 Teaspoon Paprika
Salt & Pepper to taste

For Pasta Sauce
1 Tablespoon Olive oil
Minced Garlic, 3 Big Garlic cloves
Few Chili Flakes, Optional if you prefer Spicy
3 Tomatoes, roughly sliced
1 Teaspoon Salt
1 Teaspoon Sugar
2-3 Tablespoon Tomato paste
6 Tablespoon Cooking cream
Pinch of Black Pepper
1/4 Teaspoon Dried Oregano & Basil
4-5 Tablespoon Pasta stock, Water in which Pasta was Boiled
200g Boiled Pasta
2-3 Tablespoon Parmesan Cheese
Fresh Or Dried Parsley/Basil Leaves, to Garnish

METHOD

1. Bring enough water in a pot, around 5 Cups to a Roaring Boiling point on High Heat. Mix 1 Teaspoon Salt. Add the Dried Pasta, cook 10-11 mins or till al dente (cooked but still firm) on medium High heat. Follow package instructions as depends on the pasta type used. I used Penne Rigate. Do not Overcook. Drain them once cooked and reserve the pasta water. Apply Olive oil to prevent sticking to each other.

2. Fry the Chicken Cubes in Olive Oil along with salt, pepper, garlic, onion and paprika. Fry on medium heat for 10-15 mins or till cooked. Set them aside.

3. In the same Pan, fry onions and Minced Garlic in Olive oil. Add Chili flakes if you prefer spicy. Add Tomato Paste, Sliced Tomatoes, Salt and Sugar. Cover cook 10 mins on Low Heat till Tomato Softens.

4. Once Tomatoes soften, Mash them well. Remove the skins with a Tong, optional. Add the Fried Chicken, Cream & Pasta Water.

5. Season with Black Pepper powder, Oregano and Basil. Add Boiled Pasta and Parmesan Cheese. Garnish with Red Chili Flakes, Fresh Basil and Parsley.

1/4 Teaspoon Onion powder
1/4 Teaspoon Paprika
1/4 Teaspoon Black Pepper FRY
MEDIUM HEAT
10-15 Mins
Or Till Cooked Once Cooked, Keep it Aside 1 Tablespoon Olive Oil 1/4 Cup Chopped Onion Fry till Onions turn Translucent 1 Tablespoon Minced Garlic Add Red Chili Flakes if you prefer Spicy 2-3 Tablespoon Tomato Paste 3 Big Tomatoes 1 Teaspoon Salt & Sugar COVER COOK
LOW HEAT
10 Mins Once Tomatoes Soften, Mash them Well Remove the Tomato Skins with a Tong, Optional The Fried Chicken Cubes 6 Tablespoon Cooking Cream Add the Cream after turning Heat to Low 1/4 Teaspoon Black Pepper, Oregano, Basil 4-5 Tablespoon Pasta Water (Water in Which Pasta was Boiled) The Boiled Pasta 2-3 Tablespoon Parmesan Cheese Parsley, to Garnish Parmesan Cheese, Red Chili Flakes, Parshley to Granish
