Recipe:

3 medium bananas
3 medium eggs
1 cup (125g) self-raising flour
1 cup (190g) blueberries (fresh or frozen)
1 knob unsalted butter (or oil if dairy free)

1. Mash the banana in a shallow bowl, then whisk through the egg and flour
2. Fold through the blueberries
3. Heat the butter in a large frying pan over a medium heat
4. Add 2 tablespoons of batter to the pan to form each pancake; you should be able to fit 2-3 pancakes in the frying pan at any one time
5. Fry each pancake for 2 minutes until bubbles form, and then flip and cook the underside for a further 2 minutes
6. Serve with a side of fruit and some creamy yoghurt.
