Ingredients Used:

For The Soup:
1 tbsp butter
1 tbsp olive oil
1/2 cup onion, diced
3 garlic cloves, minced
Italian seasoning
Salt
Black pepper
Garlic powder
Onion powder
Red pepper flakes
1 tbsp tomato paste
1/2 of a 28oz can crushed tomatoes
2 cups chicken broth
1 tsp white sugar
1/2 cup heavy whipping cream
1/4 cup Parmesan cheese
1 1/2 cups cheese tortellini, frozen
2 tbsp fresh basil, chopped

For The Grilled Cheese:
1 tbsp butter
2 medium croissants, halved lengthwise
Provolone cheese, sliced
American cheese slices
Mozzarella cheese, shredded

Today we’re making a creamy tomato torillini soup with croissant grilled cheese. Trust me, you’re going to want to save this one. Let’s get into this recipe. To a pot over medium heat, we’re going to begin heating 1 tbsp of butter along with 1 tbsp of olive oil. Once that heats up, we’re going to add in half a cup of diced onion. Then just sauté them for 3 minutes or until they soften. Once our onions have softened, let’s add in three minced garlic cloves. Then season with Italian seasoning, salt, black pepper, garlic powder, onion powder, and red pepper flakes. Now, just sauté those for about 30 seconds or until our garlic becomes nice and fragrant. Once our garlic has become fragrant, we’re going to stir in 1 tbsp of tomato paste and just cook that out for 1 minute. After 1 minute, we’re going to pour in half of a 28 oz can of crushed tomatoes, two cups of chicken broth, a teaspoon of sugar, and a little more salt and black pepper. Let’s give our soup a quick mix. Then we can go ahead and up our heat and bring everything to a simmer. Once our soup is at a simmer, we’re going to lower the heat back down to medium and allow to cook for 10 minutes. It’s been 10 minutes. We’re now going to pour in half a cup of heavy whipping cream. Then grate in a4 of a cup of fresh parmesan cheese. We’re then going to pour in 1 and 1/2 cups of frozen cheese torillini. Give our soup another quick mix and allow it to simmer for 3 minutes or until the tortoillini cooks through. After 3 minutes, check to see if the tortoillini is nice and cooked through. And if it is, we can go ahead and add in some fresh chopped basil and mix it in. After mixing in our basil, we can get started on our grilled cheese. For our grilled cheese, we’re going to melt down one tablespoon of butter over medium high heat. Then place down a couple of medium croissants that’s been sliced in half lengthwise. Place on some sliced proolone cheese. A slice of American cheese. And finally, some shredded mozzarella. Let’s now place on our top buns. Then just allow them to cook for two to three minutes on each side or until they get golden brown and crispy. Let’s serve it with our grilled cheese. Then our creamy tomato tortoillini soup is done and ready to enjoy.
