    Changing pH of potato is a good way to get some crisp on your fries. But you can do that with vinegar, or citric acid powder. The sugar would burn in the oil. This is a waste of cola.

    IMHO it’s better to raise the pH with base instead of lower the pH with acids when cooking potato. Parboiling the potato in baking soda before frying is the better play. Makes them super crispy.

    Hang on, hang on – is this *maybe* the greatest thing we’ve ever seen, with the exception of the cold oil bullshittery, which was indeed idiotic, as u/TwinkiesSucker pointed out? The soda pulling out the starches, is that happening aggressively? And is there some caramelization that occurs with the fries, or is it expulsion only of the starches? I need someone smarter than me, stat.

    When I season French fries with coke they make the mouth tingly and numb so you risk biting your tongue.

    Sugar is a browning agent…it probably helps give the fries a better crunch and golden hue. A lot of fast food restaurants do a sugar bath (of sorts) and par-fry their fries before shipping. Although, I’m not loving the fact that they will taste like cola.

  18. I vote stupid. Not for the coke but for poor frying technique. Cold oil. Didn’t season after cooking (or didn’t show it).

    People make pasta with Coke, so this isn’t any stupider than that. That being said, that’s still pretty damn stupid.

    That isn’t really dumb, soaking potatoes in salt/sugar water actually changes how they fry up. I think McDonald’s does this with their fries at the factories.
