


Had 3 pounds of Wagyu ground beef and a pound of Italian sausage and thought to myself hmmm let’s give it a go.
My oh my.
Astounded. Shocked. Beyond Satisfied. Please try this asap. Thanks for tuning in.
Ingredients for loaf:
3 pounds ground beef 75/25 Wagyu
1 pound spicy Italian sausage
3 eggs
Half cup fave bbq sauce (I used a hot honey bbq)
Onion powder
SPG
Whole onion
No breadcrumbs or bread here but still so hearty
Mix well
Cook:
Wrapped and frozen for 3 hours
Bbq binder, generous holy cow seasoning all around
Direct on grates at 250 degrees
Don’t open until 165
Boom. Soft inside, crusty flavorful bark on the outside. A pink ring thicker than any brisket I’ve ever thrown down.

You should try “over the top” smoke chili too. It’s fantastic. This time of year we add pumpkin to it too and it’s surprisingly delicious

What does “BBQ binder” mean?
I know you said no breadcrumbs, but I use 2lbs mest and a package of Stove Top Pork flavor stuffing snd 1 egg as the base. Other ingredients are personal preference however I also add onions, Worcestershire & Meat Church Voodoo.
