Delicious and full of flavor, this baked salmon stuffed with cheese and topped with Divina’s Roasted Red Peppers and Tangerine & Chili Olives is your new favorite dinner recipe.
Stuffed Salmon & Citrus Tapenade
Ingredients:
2.5 lbs fresh salmon (1/2 inch thick, rinsed and deboned)
1 pkg herbed cheese
2 jars Divina Roasted Red Peppers, drained and finely chopped
1 c Divina Tangerine and Chili Olives (discard tangerine slices), drained and finely chopped
2 tbsp capers, drained
2 cloves garlic, minced
1/4 c toasted pine nuts
1/4 c Italian parsley, chopped
Olive oil
Salt and Pepper
Recipe:
1. Preheat oven to 400. Slice salmon lengthwise, keeping skin intact.
2. Spread cheese mixture in the center cut area and a little bit over the flesh. Season with salt and pepper.
3. Make tapenade (can be made ahead and refrigerated). Coat salmon evenly. Bake until desired doneness. 20-30 minutes depending on thickness of filet.
