Roasted Eggplant & Yogurt Chickpea Salad (with Corn Topping)
Ingredients:
1 Turkish tea glass (about 100 ml) boiled chickpeas
½ Turkish tea glass boiled corn
1 tsp butter
2 roasted eggplants
3 roasted red bell peppers (kapya)
1 onion
3–4 tbsp yogurt
1 clove garlic
Salt, ground red pepper
Instructions:
Dice the onion and sauté until soft. Add the chickpeas and salt, and sauté a bit more.
Add the chopped roasted eggplants and cook for a few more minutes.
In a separate bowl, mix the chopped roasted red peppers, yogurt, and crushed garlic.
Combine the yogurt mixture with the eggplant-chickpea mixture.
In a small pan, melt the butter, sauté the corn, and add red pepper powder.
Drizzle this over the salad and serve.
