Welcome back to Hillside Farm! Today I’m sharing a fresh and flavorful Mediterranean Dip that’s perfect for game day, tailgates, or anytime you’re entertaining.

This layered dip starts with creamy hummus and basil pesto, then gets topped with cucumber, sun-dried tomatoes, feta, and olives for a colorful dish that looks just as good as it tastes. You can serve it with pita chips or keep it lighter with fresh vegetables. Either way, it’s always a crowd-pleaser!

You’re going to start out by taking hummus. Can be any kind of hummus. I am using a roasted garlic hummus. And you spread that onto kind of a platter that has a little bit of a lip. Um, all right. This tip is so good and it’s so good for you. But you can, what I love is you don’t need pita chips necessarily. You can serve this with vegetables. I know if my husband saw a vegetable during a football game, he might think I’d lost my mind. But um but for the ladies that are there, you can have a vegetable. So you’re going to go ahead and put this all over the tray. And again, any kind. You could probably do a roasted red pepped pepper or just a regular hummus. Here we go. After that, you’re going to take pesto. I love pesto. You can make your own pesto. I mean, look at all the basil that’s out and about right now. But if you don’t have time, just go to the store, buy a thing of pesto. Um, I just bought a small container. Put the pesto, layer that on top of the hummus. It smells so fresh. It is so fresh. It’s delicious. I love pesto. I could sit here and just eat this. All right. From here, what we’re going to do is I’ve taken a cucumber already, but let me tell you what I did to the cucumber. Take a medium to a large cucumber. Go ahead and peel it. Cut it in half. And take the seeds out. Now, why take the seeds out? You want to take the seeds out because those are going to cause a lot of water on here. You don’t need that. But so let’s say I have the whole cucumber in half. I take a spoon down the center of the cucumber and all the seeds come right out. It’s not a big deal. It’s not hard. And then I went ahead and diced it up. So I’m going to throw on right now all the cucumber. You could also do like red onion, diced red onion onto this. it be like eating a Greek salad. All right, there we go. And then I’ve got sundried tomatoes. Now, you could do probably fresh tomatoes. Uh but Alyssa told me to use some sundried tomatoes and I had those in my refrigerator. They just add a different color, too. Then you’re going to take feta, however much you want. This what I love about dips. You don’t really have to measure a whole lot. All right. And you can do it like if you love feta, put more extra. If you don’t, a little bit less. And then finally, I take some sliced olives. I don’t think it matters what kind of olives you use. I just grabbed some sliced black olives. Now, this will make my son not eat that. However, it just leaves more for me because I love olives. And there you go. It’s beautiful. again with vegetables or with pita chips. It is a perfect game day dip. And I bet you haven’t tried one yet. So try this.
