I have a lovehate relationship with strawberry refrigerator cake. I absolutely love it. My family loves it. I make this all the time for every holiday, but this year I haven’t wanted to make it at all. My aunt has been asking for this cake since December and my father-in-law has been asking for this cake since April. So, I’m making two today. So, they’re going to get a half cake and I’m going to keep one for myself. But, if my mom and my nieces see this, I’m going to be in big trouble because I did not tell them I was making this. So, you saw it’s just a box cake recipe. We bake that. We parade some frozen strawberries. We poke some holes in the cake and pour that parade over in them. Now, I try to make sure that I get that parade in every little single hole. We have a lot of strawberries, so I’m going to use this handy dandy tool just to slice them up really quickly. And then we’re going to cover these with the strawberries. Now, if it’s like a holiday or something, I usually put the strawberries on top with some berries. So, for the topping, we have some instant vanilla pudding and some milk. You’re just going to mix this together till you get that consistency. We’re going to fold in some Cool Whip. Well, I used to fold it in. Um, fold it in just like that, but now I give it a good whip because I love it even better. It is so good. Now, my father-in-law may be a little disappointed because our cakes were a little thin cuz I split one box for three. So, I didn’t get a lot of puree, but when I tell you it was still yummy and delicious, and that cake is almost gone. I only have a little small piece just like that. But it’s so
