3 Cups Bread Flour (Use a high protein flour for easiest wash, otherwise you can use AP or Whole Wheat Flour. Cannot be GF)
6 Cups Beet Juice
Oil for frying Canola, Safflower, Sunflower, Avocado, or Coconut Oil all work here
Easy Vegan Beef Broth
1 large Onion
3 Cloves Garlic
2 cubes Vegan Beef Bullion I used Oxo brand
1 tbs Marmite Optional, adds depth of flavor
1 tbs Mushroom Seasoning

Vegan Beef Stew with Seitan


Ingredients
2 cups Seitan Beef Bites
6 Cups Vegan Beef Broth Use the broth from making the seitan beef bites, or make a vegan beef broth, or you can use vegan beef flavored bullion cube
2 Large Carrots roughly 200g
1 Stalk Celery Roughly 75g
2 Large Potatoes about 450g
1 Cup Brown Lentils Soak overnight or use a can of precooked lentils
1/2 Yellow Onion
3 Cloves Garlic
1 tsp Ground Black Pepper

Seitan Beef Gyro Meat
4 oz Seitan Beef Bites
1 tbs Lebanese Spice Blend (equal parts cumin, paprika, coriander, cinnamon, nutmeg, black pepper, cloves, salt, cayenne pepper, cardamom)
1 clove Garlic
Oil for frying Any oil you prefer
Pickled Red Onion
2 Large Red Onion
½ Cup Vinegar
¼ Cup Sugar
1 Tbs Salt
Tzatziki
1 Large Cucumber
½ Cup Soy Yogurt or any variety of plant-based yogurt you prefer
1 large Lemon
1 tbs Olive Oil
1 tbs Dill

-Ginger Seitan Steak Bites-
4 oz Seitan Beef Bites
3 tbs Soy Sauce
1 tbs Maple Syrup
1 tbs Ginger Grated
1 clove Garlic Grated
1 tsp Toasted Sesame Oil
Cabbage Stir Fry
1 Cup Cabbage
½ Cup Mushrooms Sliced
1 tbs Soy Sauce
1 clove Garlic Grated
White Rice
1 Cup White Rice Washed
1 Cup Water
Fresh Toppings
½ Bell Pepper Roughly chopped into bite sizes
1 tbs Cilantro Roughly Chopped
1 tbs Mint Roughly Chopped

Green onion Thinly Sliced

With $5 worth of bread flour, I made four different vegan beef recipes. I made vegan steak bites from bread flour and beet juice. I do a process that removes the starch from the gluten by kneading the dough under the water until I’m left with pure wheat protein or gluten. Then from here, I season it with a vegetarian beef bullion cube. And then I shape it by twisting it and knotting it up. And then to help it keep its shape, I fry the exterior. And then I put it in a stock sock. In the caption, I’ll have the recipe for the vegan beef flavored broth. And then you simmer the Satan in this for about two to three hours. And then I let it rest in the fridge overnight. And then I shred it up. And once it’s all shredded, I fry it until it’s like dry and crispy. The process of frying the Satan and then simmering it for a second time helps it take on so much more flavor and it also just makes it taste really nice. Now the vegan steak bites are ready to cook with. The first thing I made with them is a vegan beef stew. It’s a healthy way to use up the broth and get some extra veggies in. Since this broth is pre-made with the Satan, this came together in about 20 minutes. To increase the fiber and the protein, I added in some soaked lentils. And soaking your lentils before cooking with them really helps to make them easier to digest so you don’t get gassy, but it also speeds up the cooking of this soup in general. And it is just so cozy with like some sourdough bread. I make a different version of this soup pretty consistently just because it’s so healthy and delicious. For my next recipe, I did a vegan twist on a Philly cheese steak, which is essentially caramelized onion steak bites with a really decadent cheese sauce. I brown the onions with like a little bit of plant-based butter. I really like Flora butter, but in the US, Myokos makes a really good butter, too. And I just brown these onions until they’re like really soft and like caramelly, you know what I mean? So that way they’re nice and sweet. And then the steak bites are seasoned with just a little bit of black pepper. So the focus of the flavor is on the onions and the cheese sauce. If you can use smoked black pepper just to add more depth of flavor to these steak bites. They already have like a really great flavor. And I love eating them plain, but the smoked black pepper just adds like this really nice oomph, you know? And then you’re going to melt down your vegan cheddar with a little bit of butter and soy milk to create a really nice smooth sauce. I like the Epic Block from Violife. That’s just my favorite like pre-made cheddar, but you can use whichever brand that you like. I like using unsweetened soy milk for my cheese sauces just because it thickens up really nicely and it adds a little bit more protein into your meal, but you can use any kind of unsweetened milk that you have. It’s really not a deal breakaker. And ideally, you would have a whisk to melt your cheese sauce, but I am in a rental kitchen in the UK and they don’t have one here. So, I got a fork to work. I have bought a whisk since, but it’s going to be a while before I’m able to replace everything. And on that note, I am using these like finger buns. They’re called finger buns in the UK, but really they’re like a hot dog bun. Use a hogi if you have it, but then you just like do like your cheese sauce and your onions and then like the steak bites. It’s super messy, but oh my god, it is so delicious. This is one of my favorite things that I made with the steak bites and kind of want to make the steak bites again just so I can have this again. But I might actually bake my own hogies cuz I don’t know where I can find them in the UK. But yeah, very messy but so worth it. This vegan beef euro was also a spectacular use of the vegan beef satan that I made and it’s a lot more like fresher and more I don’t know I don’t want to say like it’s more delicious but like I absolutely loved it especially with like the homemade pickled red onions and I like to think of this as like meal prep because then I can use the pickled red onions throughout the week. It’s just really good in a ton of recipes. So, anyways, we’re going to be making homemade taziki to go with all of this. Right now, I’m just like making like the vinegar to like pretty much soak the pickled red onions in. And they’re going to turn hot pink as they rest. So good. And then I made like this like really nice salad to go inside the euros. It’s like very simple, like just like olive oil and black pepper, but with the olives. Really lovely. So, when you’re making your taziki, you want to make sure that you’re going to squeeze out all of the juice, like the cucumber juice. That way, it’s more flavorful. I ended up just drinking the cucumber juice just cuz I think it’s really delicious. But yeah, just like squeeze out the juice after you use your grater for it. And then you’re going to add in your yogurt. Um, I did like a soy yogurt for the same reason that it’s just, you know, high in protein and delicious. I use the Apollo brand. I think that’s how you say it. A preo because I’m in the UK. But otherwise, you know, just use like your favorite unsweetened yogurt or make it yourself if you have an Instant Pot. There’s a yogurt setting on there and it’s so easy. I actually have recipes on my uh YouTube pretty confident also on my website on how to make your own yogurt. You should do it if you have the capabilities for it. So anyways, I’m frying up my shredded Satan and I’m using like a Lebanese spice blend, but I’ll put like the spices like to make the Lebanese spice blend in the caption just so that way you can use it or like if you don’t have like the pre-made spice blend. I was just lazy here and it worked really well. And then we’re going to assemble it with like the taziki and all the chopped veggies. So, I did like some sliced tomatoes and cucumbers to go with the salad and then the pickled red onions. It was just so light and refreshing and honestly just so delicious. Lot a lot less compared to like the previous recipe with like the um the Philly cheese steak. But I could eat something like this all the time. Like seriously, every week. And then the next one is like this like ginger bowl. Oh, this ginger bowl is where I pan fry the Satan in a sweet ginger garlic soy sauce and then pair it with veggies and rice. So, first you fry up the Satan in a little oil to crisp it up. And then you add in the sauce. And then you want to reduce that sauce until it’s nice and thick and sticky over the Satan. And then from there, you toss the Satan in green onion and black sesame seeds. And you could eat it just like this. But to make it a complete meal, you’re going to want more veggies. So that’s where I stir fried up some mushrooms with red cabbage with a little bit more ginger just to get more veggies in. But you can swap the veggies with whatever you have on hand. Some carrots, bok choy, leaks, fennel, whatever is in season works great. This is essentially a stir fry ba bowl with the Satan as the star of the show. So, fresh veggies in addition to the stir-fried veggies with like fresh cilantro is honestly a must, but you should also try it with fresh basil and mint and different kinds of pickled veggies for even more flavor. This is super versatile and something that I like to make regularly just because it’s so healthy and delicious. Let me know in the comments if you give this a try.
