I usually slice sirloin 1/4" thick, but decided to mix it up today. Instead, I diced up some eye of round and threw it in the marinade overnight. When I woke up, I drained the marinade and put the beef on at 180°. The sliced jerky normally takes 4 hours, but the thickness if the nuggets added about 2 additional hours. If you like jerky, give this one a spin.
Ingredients
3-4 pounds sirloin (or another lean cut)
2 cups soy sauce
1/4 cup brown sugar
1 cup pineapple juice
2 tablespoons sriracha
2 tablespoons red pepper flake
2 tablespoons hoisin
2 teaspoons onion powder
2 tablespoons rice wine vinegar
2 tablespoons minced garlic
