
I'd never heard of parched peas before I moved here. Basically they're dried carlin peas (sometimes called maple peas) soaked and boiled, with salt and pepper. Served with malt vinegar or mint sauce. They're a traditional autumn food here, and sold from street stalls in places.
Such a simple preparation belies their deep and complex flavour. Well worth a try if you're in this neck of the woods.
