Hello r/FoodLosAngeles!
Unfortunately, I got into a car accident, some guy turned left in front of me, so dealing with that forced me to cancel Saturday for a number of reasons, however, I will be out selling food on Sunday 9-14-25!
I just want to take a moment and say, I have heard a number of people, one even in my comments talking a lot of shade about how I have no clue how to run a business, and others who have said things that, as good intentioned as they are, make me think, they think I am not making money off these sandwiches. I am profiting, partly because I dont have the two biggest expenses a food business faces, rent (I am setting up on the street corner, that is obviously not expensive) and pay roll. I am the one who food shops, smokes the meat, bakes the bread, cuts up the veggies, makes the jus dipping sauce and then I am the one standing there making the sandwiches for everyone. I dont have another person I need to pay, much less a whole staff. If I were to pay myself minimum wage, I would immediately be in the red every week, that is true, but that is not an issue in my mind because I both love what I am doing and see it expanding to a very good place where I can afford to pay myself better than I could make working for someone else in a restaurant. So I am happy to do it. Plus, it is FAR less stressful than working in a restaurant.
At the $10 price point, I am not losing money and dont see raising that price any time soon. It is also important to me to deliver a high quality product that makes people happy and I enjoy meeting everyone and seeing that they liked the food.
I've been told I might have some degree of Asperger's (the cadence at which I talk and several other symptoms hint at it) and my hyper fixation is food. I don't have a diagnosis, but it would explain a lot about me and my life. In either case, your support of my food helps me do what I obsess over and perfect it and I cannot tell you how much I appreciate not just that, but also not having to explain to a boss why doing this or that with the food makes sense.
The food:
I call them "LA Cheesesteaks", smoked beef short rib, smoked and confit beef cheeks, onions, bell peppers, garlic and cheddar cheese on fresh baked, handmade rolls, with a handmade beef jus dipping sauce for $10, or 2 for $18. I have chips and soda for $1 each.
I will also have a few pint containers of smoked beef tallow I rendered from the BBQ for $5, if anyone is interested. They make great flavor bombs for soups and hot (temperature) sauces, but my wife and I LOVE making fresh tortillas with the tallow. It brings a subtle smoke and beef flavor that is quite nice.
The tallow is like a secret menu item, I wont advertise it at the stand, you gotta ask for it.
Location:
We will be at my usual location on Hollywood Blvd and N Berendo across from Barnsdall Art Park from 12 to 7 (or until we sell out, cause I haven't made it all the way to 7 in over a month!)
