  1. Ingredients (4 servings)
    • 2 tbsp olive oil
    • 1 medium onion, chopped
    • 3 garlic cloves, minced
    • 1 can (28 oz) crushed tomatoes with basil
    • 1 cup chicken bone broth
    • 1 garlic & herb Boursin cheese
    • 1 tbsp sugar
    • Salt & pepper to taste

    Instructions
    1. Heat olive oil in a pot on medium heat. Add onions & cook until soft. Then reduce heat, stir in garlic & cook for 1 minute.
    2. Add canned tomatoes and bone broth. Stir in sugar & add salt or pepper to taste. Simmer for 15 minutes.
    3. Use an immersion blender (or carefully transfer to a blender) and blend until smooth.
    4. Stir in Boursin cheese until melted & creamy.
    5. Serve with a grilled cheese to dip!
