Dough:

  • Flour β€” 600–650 g (about 4–4.5 cups)
  • Milk β€” 200 ml (about 4/5 cup)
  • Eggs β€” 2
  • Sugar β€” 100 g (Β½ cup)
  • Butter β€” 75 g (about 5 tbsp)
  • Yeast β€” 50 g fresh (or 11 g dry)
  • Salt β€” 1 tsp

Filling:

  • Pitted cherries β€” 500 g
  • Cherry coulis (cherry juice thickened with cornstarch) β€” to taste

Cream:

  • Cream cheese (e.g. Mascarpone, Philadelphia, Almette) β€” 50–60 g (3–4 tbsp)
  • Powdered sugar β€” 100 g (about 4/5 cup)
  • Soft butter β€” 40 g (2–3 tbsp)
  • Vanilla β€” to taste

    I work at a restaurant that only does cinnamon rolls and breakfast sandwiches, and this February our special roll was a chocolate cherry cinnamon roll. It was SO GOOD.
