New York’s favourite Italian fine dining haunt, Carbone, has arrived in Dubai, bringing its signature dishes and Mario Carbone’s famous flair

When Mario Carbone announces that his spicy rigatone pasta is arriving in Dubai, it draws a crowd. With outposts in New York City (two locations, in fact), Las Vegas, Miami, Dallas, Hong Kong, Riyadh, and Doha, Dubai is the latest jewel in the chef’s crown, located at Atlantis The Royal.

Its opening night attracted a clutch of distinguished guests, welcoming Naomi Campbell, Alessandra Ambrosio, Winnie Harlow, Romee Strijd, Kat Graham, and footballer Rio Ferdinand, for an evening themed to 1950’s New York glamour.

What to expect on the menu? Mario’s signature dishes include caesar alla ZZ, jumbo shrimp scampi, lobster fra diavolo, veal parmesan, chicken balsamico, and the cult-favourite spicy rigatoni. The interiors match the menu’s decadence – elegantly adorned with chandeliers, a world-class art collection, leather banquettes, and damask-adorned walls with Venetian glass mirrors.
