


- 500 g white bread flour
- 350 g water
- 100 g sourdough starter
- 10 g salt
- Mixed everything
- Coil fold (0:30)
- Coil fold (1:00)
- Coil fold (1:30)
- Coil fold (2:00)
- Coil fold (2:30)
- Shape and into the banneton (3:15)
- Rest 12 to 16 hours in cold (this was 14, I usually just go with when I've got the time to bake it)
- Preheat Dutch oven 45 minutes at 450°f
- 25 minutes lid on
- 20 minutes lid off
- Cooling rack
Bonus:
Honduran Pan de coco
– 400 g coconut milk
– 612 g white bread flour
– 15 g sugar
– 136 g sourdough starter
– 59 g coconut oil
– 9 g salt
Same process as above
