  • 100 g sourdough starter
  • 10 g salt
  1. Mixed everything
  2. Coil fold (0:30)
  3. Coil fold (1:00)
  4. Coil fold (1:30)
  5. Coil fold (2:00)
  6. Coil fold (2:30)
  7. Shape and into the banneton (3:15)
  8. Rest 12 to 16 hours in cold (this was 14, I usually just go with when I've got the time to bake it)
  9. Preheat Dutch oven 45 minutes at 450°f
  10. 25 minutes lid on
  11. 20 minutes lid off
  12. Cooling rack

Bonus:
Honduran Pan de coco
– 400 g coconut milk
– 612 g white bread flour
– 15 g sugar
– 136 g sourdough starter
– 59 g coconut oil
– 9 g salt
