Getting the hang of it. I’m afraid my oven didn’t preheat enough and I got some mixed results but still great. Biga is the way to go. Some of the process at the end and the oven in question.

    Looks great. I tried biga for the first time about 2 months ago. I was shocked how different it was to a poolish. The dough was much easier to handle and shape without tearing.

    Went back to poolish a week later and told my wife it’s going to be biga going forward.
