rosemary garlic focaccia
(this one is perfect for sandwiches!)
4 cups (512g) ap flour
2 1/2 tsp (15g) salt
2 tsp (6g) instant yeast
2 cups (480g) warm water
butter to grease pan
~2 tbsp (27g) extra virgin olive oil
flaky salt (to taste)
2 tsp (2g) fresh rosemary
3–4 cloves (15g) garlic
*add yeast to warm water and let sit for a couple min until foamy. then add in flour and salt. mix until it forms into a sticky ball. then lightly cover with evoo and let rise for 1-2 hrs until doubled in size. line the bottom of a 9×13 pan with parchment paper (i used a 8.5×11 pan). add about 1-2 tbsp of evoo on the parchment and spread evenly, set this aside. after the dough has doubled in size, while still in the bowl, make 4 quarter folds. once its in a roughly shaped ball, gently add to the baking pan and roll it around to cover it in oil. let rise for about 30 min (uncovered). after second rise, add rosemary and sliced garlic over the top, then add about 1 tbsp more of evoo. lightly cover your fingers in evoo and press down to create dimples. sprinkle with flakey salt and bake at 425 for 25-32 min or until golden and crispy. let cool before slicing 🙂 recipe by: alexandracooks
