Really annoyed – I have been running into an issue for the last 2 smokes where my timing is just off. Not like, an hour or 2, I’m talking 5-6 hours. I understood meats can be kind of picky and work on their own timing but this time I decided to put a thermometer in my smoker not in the meat. I had my smoker set at 260, it came to temp for about an hour before I checked to make sure. I had one thermometer right next to my meat, on the rack and it was reading 233˚. I had another on the top rack, where it was reading 238˚.

Has anyone else had issues like this? When I get back home I’m going to locate the gauge and see if it’s dirty and try to get another good reading. But dang this is annoying, especially when I set a brisket at 220 over night and it’s cooking at 180!!!

    Yup, I posted about this exact same problem last week. Mine is 40°-60° off.

    The PB probes and temp boards are trash. It will hold the temp you set it at majority of the time not taking into count for wind and outside temp) I have never gotten good results from them, even when I tested them with no food. Stick with your separate probes. I’ve not had an issue using them compared to the PB ones on the smoker.
