My husband bought a smoker (Recteq Bullseye), I was against it originally…now I’m wondering why we’ve waited so long!!!! I’ve had smoked food before and found it to be really over powering but I have loved every single thing he’s made so far!

He’s made ribs, chicken thighs, steak but last night he made a brown sugar smoked cream cheese and my goodness, it was amazing! We paired it with crackers, blueberry jam and pickled jalapeños.

He’s attempting a brisket this weekend 🤞🏻

    I do a smoked cream cheese every time I fire up the smoker. Makes a phenomenal appetizer while waiting for the main show

    Smoked cream cheese is a top tier treat. I recommend smoked cream corn. Also jalapeño poppers.

    I had a smoker when I met my wife.

    I got a Sous Vide after we were married and won her over with homemade cold cut turkey breast and roast beef.

    The Bullseye is a work horse. I have had mine since they first came out. Still use it 3-4x a week and no issues.

    Dips are great in the smoker.

    If you have a good spinach dip recipe. Do it in the smoker.

    Also, jalapeño poppers wrapped in bacon in the smoker are great

    Tale as old as time – at first, there are mixed feelings about the new smoker, questions about when it will be used…yadda yadda

    Then one smoked set of ribs/chuck/brisket later and suddenly it was the best idea ever!!

    Pellet smokers are a lot more mild than a traditional smoker. A lot of people like them better because you dont get a whole lot of smoke flavor from it

    Just made smoked trout and a smoked pork loin wrapped in bacon today. Both were really good. Look up Dr Bbq big green egg brisket. That’s the best recipe I’ve found so far.

    Tips for brisket:
    Trim aggressively will result in better end result
    On pellet smokers fat side down smoke at 225F
    Smoke until satisfied with bark(anywhere from 6-8 hours) then wrap and finish in oven at 250F until probe tender
    Allow to rest for at least a few hours but preferably overnight at 150F

    Expect total cook time to be 14 hours plus, I also recommend he takes notes of what steps he did so in the future he can make adjustments if something didn’t work or if it did keep it working. Briskets can come out drastically different just from changing a variable or too so it’s good to document the process, sounds silly I know but overtime it will pay off as the meat comes out better and better each cook.
