Broth ingredients: I can't remember exactly as i used scraps I had in the freezer as well as fresh but roughly 2 onions 1 garlic cut in half
1in ginger sliced
1 or 2 carrots
like a third a bag of celery
a whole bunch of green onions
black pepper corns
3 bay leafs
Splash apple cider vinegar
Cooked for 20hrs
Tare: sesame oil around a tea spoon
Around tea spoon ginger minced
Around 2 tea spoon garlic minced
Broth when preparing: mirin sake maple syrup soy sauce splash rice vinegar
I don't measure but I'd saying around 1/2 table spoon each for sake maple and syrup with soy sauce to taste preference with salt
Topping 7min hard boil egg and green onions 🙂

  1. If you liked it that’s fine, and good for you.

    Nevertheless, chicken looks awful, green onions are cut awfully. Celery is not a traditional ingredient for the broth, same with cider vinegar, maple syrup and bay leaves.

    You clearly had the “exotic” rice wines and vinegars, which is the only sensible reason why use the weird ingredients.
