**INSTRUCTIONS:**
1. Warm the olive oil in a pan over medium heat. 2. Add the shrimp and garlic, roasting for 2–3 minutes on all sides until the shrimp turn opaque and pink. 3. Season with pepper powder and salt, then transfer the shrimp to a plate. 4. In the same pan, sauté the mushrooms for 2–3 minutes until lightly browned. 5. Add the spinach to the pan and sauté for 1–2 minutes, or until it wilts. 6. Stir in the parmesan cheese, heavy cream, and mozzarella cheese, whisking until fully melted and creamy. 7. Add the zucchini noodles, cooking for 2–3 minutes until just tender, and toss thoroughly to coat with the sauce. 8. Return the shrimp to the pan, mixing gently to warm the dish evenly. 9. Sprinkle shredded cheese on top of the Keto Zucchini Noodles & Spinach and serve while warm.
