Ingredients (Serves 4)
Long eggplants: 2 (about 500g)
Ground beef: 200g
Tomatoes: 3 (diced)
Onion: 1 (sliced)
Garlic: 3 cloves (minced)
Olive oil: 3 tbsp
Spices: 1 tsp cumin powder, ½ tsp cinnamon powder, salt/black pepper to taste
Steps (Total Time: 45 minutes)
Wash and slice eggplants into thick pieces, brush with oil and salt, bake at 200°C for 10min until soft.
Heat pan with oil, sauté onion and garlic until fragrant, add ground beef to brown, then stir in diced tomatoes and spices, simmer for 5min to make sauce.
In a baking dish, layer eggplant slices, pour over meat sauce, repeat 2-3 layers.
Drizzle with olive oil, bake at 180°C for 20min until top is golden.
Remove from oven, slice, garnish with fresh parsley, and serve!
Pro Tip: For a vegetarian version, swap beef with lentils. Serve hot with rice or pita bread for the perfect meal!
