Tuscan White Bean Soup
1 pound Italian sausage
1/2 cup onion, diced
1/2 cup celery, diced
1/2 cup carrots, diced
1 tsp garlic powder
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
red pepper flakes (optional)
2 cans cannellini beans, drained and rinsed
4 cups chicken broth
2 heaping Tbsp tomato paste
2 to 3 handfuls of fresh spinach
1 cup heavy cream or half and half
salt and pepper to taste

Instructions
Brown sausage in large soup pot. Add vegetables and seasonings and cook until tender. Add beans, broth, tomato paste and cook for 15 to 20 minutes. Add spinach and cream. Serve with crusty bread for dipping.

Hey everyone, welcome back to my kitchen. Today we’re making something cozy, something comforting, and straight from the heart of Italy. We’re making a Tuscin white bean soup. It’s simple, hearty, and packed with rustic flavor, perfect for a chilly day. So, go grab your favorite soup pot because it’s time to get cooking. So, in my soup pot here, I’m going to brown up a pound of Italian sausage. And then I’m going to add some carrots, celery, and onion. It’s about a half of a cup of each. Then add a teaspoon of garlic powder, dried basil, dried oregano, and dried thyme. Then I’m adding two cans of Catalini beans that have been drained and rinsed. Four cups of a chicken broth. And then two heaping tablespoons of tomato paste. Give a good pinch of salt and black pepper. And you could also add some red pepper flakes. [Music] All right. After it’s been boiling for a while and the vegetables are tender, then you can add your spinach. And I’m just adding a couple big handfuls of spinach. [Music] And finally, add one cup of heavy cream. Or you could also use half and half.
