Every fall, I make some iteration of a harvest bowl, and I’ve had this specific spoonable salad situation on rotation the past few weeks. The base is couscous, roasted honey nut squash, which is like my favorite squash ever, loads of crispy chickpeas, and shallots. And I love using crispy chickpeas in this specific bowl because they add that addicting crunch element to the salad. Plus, they add in protein, fiber, both soluble and insoluble fiber, iron, zinc, B vitamins, and other key nutrients that encompass the Pulse family. And quick little side note, pulses are the dry edible seeds of plants in the legume family, which includes chickpeas, lentils, dry peas, and beans. Any who, the main flavor agent of this dish is the spiced maple dressing, which is essentially a crispy brown garlic olive oil with coriander, cinnamon, maple, and lemon that just ties everything together so so well. And I will definitely be putting on everything going forward.

  1. Looks good. I would switch out quinoa for wild rice or quinoa (GF). Those are the biggest shallots I have seen!
