









It is not as pretty pics as the last post, no need to upvote. I just figured some of you would like to see this.
You can buy any sort of Indian pickles and add the sauce/oil to a fish mayo like this, it will give it a very good sour kick. The one I used for this one is a homemade sour mango one (Tamil, south east India) and Jack mackarel, but I have done it with tuna and north Indian pickles too.
Usually we would have done this on toast, but the bread van didn't come (it was a holiday) so we just went with roti.
Also, the frying of spices (tadka in Hindi) adds so much flavour to almost anything, and something I'd encourage you all to explore. The spices will taste more of themselves, and the oil they are fried in will take up all the flavours too.
This tadka was a very simple one of mustard seeds, curry leaves and hing (please buy it, it is a very smelly very good spice), but it did a world of difference.
