MEDITERRANEAN QUINOA SALAD 🍋✨ a spoonable salad that holds up well for bright, fresh & healthy lunches all week long 🤝

Ingredients:
1 cup quinoa (180 g) dry
1/2 small red onion (100 g) finely chopped
10 oz pack cherry tomatoes halved
1 medium english cucumber (250 g) peeled, chopped
1 large red bell pepper (170 g) chopped
15.5 oz can great northern beans rinsed and drained (or chickpeas)
1/4 cup fresh dill chopped
1/4 cup fresh parsley chopped
1/2 cup crumbled feta (56 g)
3 cups cooked chicken breast (420 g) chopped
fine sea salt to taste
CREAMY LEMON VINAIGRETTE
1/4 cup lemon juice (60 ml) fresh
2 tsp dijon mustard (10 g)
1 tbsp honey (21 g)
1/2 tsp garlic powder
2 tbsp non fat plain greek yogurt (30 g)
2 tbsp extra virgin olive oil (30 ml)
pinch salt and pepper

Instructions:
1. Rinse the quinoa well and cook according to package instructions (I cook in a rice cooker on the “white rice” setting). For a delicious roasted flavor, toast on a hot pan for a couple minutes before cooking.
2. For the dressing, add all lemon vinaigrette ingredients to a jar or container and whisk vigorously until emulsified (I often use a frother).
3. Once the quinoa has cooked and cooled, fluff with a fork and add to a large mixing bowl along with the rest of the ingredients.
4. Pour over the dressing, mix well, and season with sea salt to taste (I typically add 1 tsp). Serve with fresh lemon wedges and enjoy!

If you love fresh Mediterranean flavors and salads you can eat with a spoon, you have to make this Mediterranean quinoa salad. Nutritionally, this is a total powerhouse of a salad. This is packed full of whole foods, fresh ingredients, grilled chicken to fill your day with vitamins and minerals, protein, and fiber. The salad also holds up really well for meal prep, which you guys know is my favorite ever. I love having healthy meals on hand. They’re just ready to go, especially if I know that I’m going to be going out to dinner or something. I can make sure I’m still getting everything in to feel my best. Everything is tossed in a creamy lemon vinegrett made with simple ingredients you might even have on hand. Lately, I’ve just been mixing my dressings with a frothther. I kid you not, it is so much faster and easier than any other way. Game changer. And the rest is so easy. Just chop, toss it in a huge bowl, mix it up, and you’re good to go. Serve it with some more fresh lemon and enjoy.
