ARROZ CON LECHE INGREDIENTS:
For the arroz con leche:
► 3 cups of water
► 1 1/2 cup of rice (I’m using long grain rice)
► 1 tsp pumpkin spice
► 3 cinnamon sticks
► 2 cups whole milk
► Some ground cinnamon
For the pumpkin mixture:
► 1 can of evaporated milk
► 1 can of condensed milk
► 1/2 cup pumpkin pure
► 1 tsp vanilla extract
Today I’m going to make one of the best fall comfort desserts, pumpkin spice aros con leche. It’s so delicious, you guys are going to love it. We’re going to start off by adding three cups of water to my pot and set the heat to high. Once the water is boiling, we’re going to add 1 and 1/2 cups of white rice that I’ve already washed along with one teaspoon of pumpkin spice and three cinnamon sticks. Give it a mix. Cover it up for about 15 minutes or until your rice has fluffed up. Meanwhile, we’re going to make the pumpkin mixture. I’m going to add one can of evaporated milk, one can of sweetened condensed milk, half a cup of pumpkin puree, and 1 teaspoon of vanilla extract. Mix everything until well incorporated. It’s been 15 minutes, and as you can see, the rice is now fluffy. We’re going to add in the pumpkin mixture along with 2 cups of whole milk. Give it a mix. We wait for it to boil. It’s been 10 minutes, and as you can see, it’s now boiling. We’re going to reduce the heat to the lowest setting and let it simmer until it thickens up to the consistency that you want. And remember to keep stirring. It’s been 5 minutes. Our ros leche is now ready. And this is the consistency that I like. Now I’m going to serve myself a cup.
