How do you make chopped green onions without that sharp spicy smell?

    Soak them in water, blanch them, quickly stir fry them at high heat (5-10 seconds). Many different ways all with slightly different outcomes. My personal favorite is a quick stir fry at high heat, gives them a lovely texture while softening the flavor

  7. I think japanese negi isn’t exactly the same as the green onions sold in the west, it’s a bit milder.

    Soak in cold water then be sure to dry them.

    You could also add a light dressing to the onion.
