The Tsubaki Tower launched its 2025 “Tsubaki Journey of Flavors” on Oct. 3 at 6 p.m. with an Italian-themed dinner at Casa Oceano, the resort’s all-day dining restaurant known for elaborate buffets and wine pairings. The series continues every Friday in October with Spain (Oct. 10), France (Oct. 17) and Latin America (Oct. 24).

Assistant General Manager Joel Davis said guests have embraced the resort’s annual tradition of bringing global cuisine to Guam. “For the past three years before the holiday set in, we treat our guests to an international culinary experience that introduces new dishes and wines to Guam. It’s an experience focused on good food, good wine and good company,” Davis said. He added that Casa Oceano’s culinary team built menus to showcase international technique and new wine labels.

Italian night highlighted fresh pasta at action stations, rotating pizzas and classic sips like the Aperol spritz. A pour of Masseria Felicia Falerno del Massico paired with plates such as rigatoni with sausage, mushrooms and bell peppers. The pasta team worked to order while trays moved steadily from the kitchen.

The carving station offered a mouthwatering selection of meats with rich, savory sauces that elevated every bite. At the hot line, guests enjoyed a silky truffle risotto alongside several made-to-order pasta options. The bolognese lasagna was exceptional – layers of tender pasta, slow-simmered meat sauce and creamy béchamel – a comforting highlight that anchored Casa Oceano’s Italian-themed evening.

Tsubaki desserts never disappoint, and this evening’s spread was both creative and elegant. The pastry team featured mousse cakes, delicate panna cotta, tiramisu, assorted cookies and inspired ice cream creations – artful portions with balanced sweetness and polished plating. It was a photo-ready finale that perfectly capped Casa Oceano’s Italian-themed evening.

Tsubaki passport returns

Passports will be available at Casa Oceano during the first two Friday dinners. Repeat guests can collect stamps toward rewards. Guests who collect 12 stamps – four each from 2023, 2024 and 2025 – will receive a one-night stay in a Camellia Jr. Suite for two. Those with eight stamps, split evenly between 2024 and 2025, will earn a one-night stay in a Camellia Room for two. Guests who collect four stamps in 2025 can enjoy a complimentary dinner for two at Millano Grill –La Stella-, while those with three stamps this year will receive lunch for two at Casa Oceano.
