Carbone—beloved by celebrities and famed for its spicy rigatoni vodka—first opened in downtown Manhattan in 2013, quickly becoming one of New York’s most coveted reservations. It’s continued to expand its presence, with openings from Doha to Hong Kong, London, Dallas, Miami and more cities. Now, the storied Italian-American restaurant is setting its sights on a new location in Sin City in a space that overlooks the Bellagio Fountains.

Just announced, the new Carbone Riviera will debut at the Bellagio Resort & Casino in Las Vegas on Friday, Nov. 7, 2025. Reservations open Thursday, Oct. 9, and can be made via Bellagio.com or by calling the Bellagio Concierge at (702) 693-6705.

Created by Major Food Group co-founders Mario Carbone, Jeff Zalaznick and Rich Torrisi, in partnership with MGM Resorts International, the restaurant is set against the backdrop of the Fountains of Bellagio.

But it gets even better: In addition to the Carbone Riviera opening, Bellagio will also debut a new guest experience with a luxury Riva mini yacht. Now, for the first time in the resort’s history, guests can ride around Bellagio’s Lago di Como while enjoying breathtaking, front row views of the Fountains of Bellagio.

What is Replacing Picasso at the Bellagio?

Carbone Riviera replaces Picasso, the fine-dining mainstay that graced the lake in front of Bellagio for 25 years.

“This is without exaggeration one of the most important, not to mention gorgeous, restaurant spaces in America: to say that it is an honor to be its latest steward does not do this moment justice,” says Major Food Group Co-Founder Mario Carbone.

When Carbone Riviera opens this fall, guests can expect an opulent seafood display worthy of the Riviera itself. Towering over ice, the showstopping spread will feature Dungeness and king crab, oysters, lobster, sea urchin, razor clams, and other delicacies flown in from around the world.

Menu highlights will include salt-baked branzino, grilled Dover sole, spicy lobster meatballs, and a two-pound lobster pasta, alongside Carbone’s iconic spicy rigatoni vodka.

For those seeking fresh air with their fine dining, Carbone Riviera will also offer an outdoor lakeside deck and patio, where guests can enjoy exquisite flavors beneath the glow of the Bellagio’s fountains.

Why is there a boat in the Bellagio Fountain?

From catching a show at the Sphere to looping the rollercoaster at New York-New York, Las Vegas has long been the world’s ultimate fantasyland. But the city’s latest luxury addition may be its most elegant yet.

The Bellagio is introducing a new experience that will transport guests straight to Italy: a private yacht cruise around its world-famous dancing fountains.

“Poised to become one of Las Vegas’ most coveted luxury experiences, the yacht will reimagine one of the city’s most iconic landmarks into an intimate escape, inviting select guests to cruise the lake as the world-famous Fountains dance around them,” according to a news release from the resort.

The yacht made its first public appearance on Oct. 3, ahead of its full debut next month to coincide with the opening of Carbone Riviera.

Meet Fortuna: The new yacht debuting at Bellagio

The 33-foot Riva “Anniversario” yacht, named Fortuna, was paraded down the Las Vegas Strip before being gently lifted by crane into Lago di Como, the Bellagio’s glistening man-made lake.

Handcrafted in Italy and one of only 18 of its kind in the world, Fortuna lives up to its name—which means “luck” in Italian—symbolizing good fortune for all who board. During its maiden voyage, the yacht glided across the lake as the fountains danced to Andrea Bocelli’s “Con Te Partirò.”

While pricing and reservation details have yet to be released, the experience promises a serene new vantage point of the fountains, which is particularly appealing as Las Vegas prepares for the Formula 1 Grand Prix (Nov. 20–22), when street access along the Strip will be limited.

What time are the fountain shows at Bellagio?

The Fountains of Bellagio remain one of the most recognizable landmarks in Las Vegas, shooting water more than 460 feet into the air in perfect sync with music and light.

Monday–Friday: Every 30 minutes from 3 p.m. to 7:30 p.m., and every 15 minutes from 8 p.m. to midnight.

Saturday, Sunday & Holidays: Every 30 minutes from noon to 7:30 p.m., and every 15 minutes from 8 p.m. to midnight.

Guests captivated by the dancing fountains can also book premium lake view or fountain view rooms, or soon, experience the spectacle from the deck of Fortuna.
