Tsukemen at Hakata Gensuke in Melbourne

Absolutely phenomenal. The broth had just the right amount of salinity and viscosity, the noodles were on point. Despite being served as one big piece, the pork belly was fatty and delicious.
I have no idea if the addition of rice to the broth-dashi mixture after finishing the noodles is traditional but I liked it quite a bit!
