We Italians love to stuff things and Italian sausage stuffed porttoella mushrooms is just one example. We’re going to start like this by sautéing spicy Italian sausage. Add onions and garlic and some spinach. Mix in some seasoned Italian breadcrumbs and some pecorino romano cheese and mix. Give it a drizzle of extra virgin olive oil to hold everything together. Drizzle your cleaned out porttoella mushrooms with extra virgin olive oil, salt and pepper to taste. Fill with the filling. Top with shredded mozzarella cheese and bake. Serve on a platter drizzled with my easy marinara sauce. Top with more sauce. Sprinkle with more grated cheese and parsley and enjoy. Delicious.
