The Easy Mousse:
Melted Dark Chocolate 150g
Heavy Cream 240ml (1 cup)
For the topping:
Melted Dark Chocolate 150g
Cake:
Cocoa powder 2 tablespoons
Warm Water 60ml (¼ cup)
Plain Flour 125g (⅔ cup, 3 tablespoons)
Baking powder ½ teaspoon
Baking soda ¼ teaspoon
Sugar 100g (½ cup)
Butter 100g (7 tablespoons)
2 Eggs (medium size)
Vanilla extract 1 teaspoon
Measuring cup size – 240 ml
Baking pan 8-inch round
Method:
Mix Cocoa and the Warm water. Set aside.
In a separate bowl, add all the dry cake ingredients.
Mix well.
Add the wet cake ingredients to the same bowl.
Add the Cocoa mixture.
Whisk for about 20-30 seconds.
Give it a mix.
Whisk again for about 20-30 seconds.
Give a final mix.
Now
Bake at 175c (350f) for about 25-30 minutes.
Leave to cool completely.
Make the mouse:
Whisk the cooled heavy cream in a bowl.
Halfway through add the melted dark chocolate.
Whisk until it becomes thick.
Spread evenly on top of the cooled cake (while in the same baking pan)
Chill for about 1 hr.
You can store it in an air tight container and refrigerate for about 4-5 days!
