There’s no better way to kick off fall than making my creamy, dreamy, tried and true mushroom risoto. To make this, you just need one pan. And I like to pan sear my mushrooms ahead of time to get that golden crust alongside my shrimp. And then once everything’s cooked, I’m going to let it sit on the side while we start making the risoto. Into a pan goes onions, garlic, sage, and once they’re soft, you can add in the arbor rice or any rice you’d like to use. Let that toast for about a minute. Then we’re going to add in some fennel seeds and red pepper flakes. Now it’s the fun part. So, first you want to pour in about a cup of beef broth or any sort of broth you’d like. Mix and just let the rice simmer until it soaks up about 75% of that broth. Repeat the process of broth mix, broth mix until the rice is fully cooked and you have the consistency that you like. Add the mushrooms in and add as much cheese as your heart desires. Finish it off with your juicy shrimp and chili crisp and enjoy.
