
Dinner was two slices garlic bread, 1/4 cup cottage cheese, sliced tomatoes, 1/4 cup mozzarella, sprinkle of basil and 3 slices of pepperoni. 475 calories. More than I usually have for dinner but breakfast and lunch were light.

People are sleeping on baked cottage cheese. I make a flatbread with it in place of ricotta and it’s amazing.
We call it poor man’s pizza in our house.
