
🍄 Creamy Balsamic Mushroom Pasta 🍝

Recipe
- 8 oz whole-grain pasta
- 16 oz mushrooms, sliced
- 1 tbsp olive oil
- 3 handfuls spinach
- Black pepper
Balsamic Sauce
- 1 cup silken tofu
- 1 cup unsweetened plant milk
- 2 tbsp nutritional yeast
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tsp thyme
- 1 tsp salt
- ½ tsp rosemary
Steps
- Blend sauce ingredients.
- Sauté mushrooms in oil until nearly done (3–6 min).
- Pour sauce into the pan. Simmer 5–7 min uncovered (if too thick, add milk or veggie broth).
- Cook pasta in salted water.
- Add spinach to the sauce and let it wilt.
- Toss pasta in the sauce until coated.
- Serve with black pepper.
