Hey campers, if you haven’t had roast beef with a horseradish ioli on a bagel, this is your sign. Plus, there’s caramelized onions, so that’s what we’re cooking first. And a little oil and butter. Here’s where my family was laughing at me for the weird eye contact. Adding a pinch of sugar jump starts the caramelization. Let’s make that aioli with some mayo, some sour cream, garlic powder, lemon juice, horseradish, and some salt and pepper. That looks creepy. Mix that all up. And if your onions are getting close to done, put some roast beef down on the griddle. I decided to season mine up with a little viddle glitter. I’ll tag where you can get that below. I went to my favorite bagel shop and I got cheddar bagels for these and I gave them just a little steam to soften up while they’re toasting. Time to make some roast beef piles and melt some cheese on top. While that’s melting, keep an eye on those bagels. When they’re just right and toasty, take those off. What is it about melty cheese?
