
So I made some lemon RI with this brand and it was, to say the least, the best RI I’ve ever had. Was way lemony and just good. So I made some pumpkin cookies for an upcoming project- hoped to put cream chs RI on them using same brand. 1. It smells nothing like cream cheese. Smells way chemical-like. 2. Doesn’t taste cream cheesy at all- just sweet powdered sugar tasting RI. (Disappointed but not defeated) any suggestions? Will it mull? Dare I double the amount of flavoring? Right now it’s not ruined, just not cream cheese at all. Dare I add more ? It was a 2 pound sugar recipe (usuals of everything normally used) with 2 tsp flavoring (plus vanilla as usual). Anyone have experience with this exact flavoring?

Hmm. I just used this for my RI a couple of weeks ago for rehearsal dinner cookies. I will agree that it didn’t overly taste like cream cheese, but I felt that it still had a okay flavor. I only used 1.5 tsp for a 2lb batch. Cookies got rave reviews, so I’m not sure if I just lucked out?

I totally know what you’re talking about! This stuff doesn’t smell like cream cheese at all. But I’ve used it in royal icing, and my family LOVED the result!! It evens out a lot in the actual recipe
I can’t speak to this flavor but what I’ve done in the past when I’m not sure is weigh out just a little bit of my icing (maybe 1/4 cup or so), add more flavoring to just that bit (measuring as I go), then if I like it, I do the math to scale up for the rest. If I don’t like it, I just toss that bit* and do something else for the bulk.
(*If the flavor isn’t gross, just not what I wanted, I’ll sometimes instead dye that icing black and use it for tiny detail bits where you won’t get enough to really taste it anyway)
I had this issue when I was trying a red velvet cutout recipe with cream cheese icing, I found a blog (your baking bestie, maybe?) somewhere that basically had the same feedback as you and recommended using Lorann cheesecake super strength flavoring. I was very happy with the flavor results!
I find that brand of emulsions to be extremely hit or miss. Some flavors spot on and some wildly off.
Was suggested in one of the groups to use Cheesecake flavor instead, and it’s perfect. I add a 1/2 tsp. more; doesn’t affect the consistency of my RI.
