Focaccia

Ingredients
• 1 packet active dry yeast
• 1 ½ cups warm water (about 110°F / 45°C)
• 2 cups all-purpose flour
• ¼ cup extra virgin olive oil (plus more for greasing)
• 2 tsp salt
• 1 tsp sugar
• Fresh rosemary
• 2 cloves garlic, minced
• Flaky sea salt, for topping

Instructions
1. Activate the yeast — In a large bowl, combine warm water, sugar, and yeast. Add 2 spoonfuls of flour and let it sit for 20 minutes or until foamy.
2. Make the dough — Add salt, remaining flour, and a drizzle of olive oil. Mix until a sticky dough forms. Stretch and fold with wet hands until smooth.
3. First rise — Cover and let it rise until doubled in size.
4. Second rise — Do one more gentle stretch and fold, cover, and let it rise again until doubled.
5. Prepare the pan — Line a baking pan with parchment paper and drizzle generously with olive oil.
6. Shape the dough — Place dough in the pan, fold twice more, flip it, and let it rest until puffy. Gently stretch to the corners so it fills the pan evenly.
7. Topping — Mix olive oil, minced garlic, and rosemary. Brush over the dough, then use your fingers to dimple it all over. Sprinkle with flaky sea salt.
8. Bake — Bake at 425°F (220°C) for 20–25 minutes until golden brown.
9. Serve — Let cool slightly and enjoy warm with olive oil and balsamic vinegar.

If you’re not great at baking like me, this faukatcha recipe is for you. Let me show you just how easy it is to make the softest golden bread right at home. In a large mixing bowl, I combine warm water, sugar, yeast, and a few spoons of flour to help it activate. Once it gets nice and foamy, I mix in the salt and the rest of the flour and a good drizzle of olive oil. And now cover it up for 15 minutes. Then I stretch and fold the dough with wet hands and cover it again and let it rise until double in size. Next, I drizzle good olive oil all over parchment paper. Transfer the dough, fold it once more, flip it, and let it rest. In the meantime, I’m making olive oil with garlic and rosemary. When it’s fluffy again, I stretch it out in the corners. Then, I brush it generously with the mix of olive oil, garlic, and rosemary and use my fingers to dumple the dough all over. Finally, I sprinkle with flaky salt. Recipes in the caption.
