    Definitely mostly good. A few are off in thickness but that’s always going to happen a bit. Just focus on keeping your knife sharp and your hand movements steady.

     I worked at a ramen spot years ago. Multiple 22 qt Cambros of razor thin scallions were needed daily. They had to be perfect every time or else the owner and chef would ridicule the shit out of you.

     Or worse, make you use their knife. For some reason this stings more than the ridicule.

    Zooming in, your chives lack consistency and look a bit lazy. I can see from the edges your knife is not sharp enough. Work in smaller bunches so you can maintain control and keep an eye on your knife work better. 

    Sharpen that knife and focus.

  14. As someone who doesn’t work in the restaurant industry but does enjoy cooking, I have learned so much from these posts! I think it should be a monthly occurrence that a new food item is picked and someone not great at it has to keep getting better and show us the progress so we can learn from their mistakes.

    I also appreciate this as someone who really dislikes getting surprise large chives in my food.
