Crema is usually a good thing. Sure I’ve pulled great shots with little to no crema. I rarely pull a bad shot that has good crema. I’ve pulled plenty that didn’t.

You should ideally degas your coffee beans for 7 days after roasting. I believe these beans were very recently roasted.
