After watching this video, I was glad to learn that koji (miso, etc.) not only enhances flavor, but also nutrition!

    Since I first tried miso paste, I have kept one or two containers of it in my refrigerator. I keep one red and one white miso. I mix it with a little water and drizzle it on my veggies before cooking. I often add nutritional yeast to make it a butter alternative. You could also add oil for the mouth feel.
