* 1 large sweet potatoes(peeled and cubed)
* 2 large carrots (cut into sticks or rounds)
* 1 cups Brussels sprouts (halved)
* 1 large red onion (cut into wedges)
* 2 large parsnips (peeled and cubed)
* 1 red bell pepper
For seasoning:
* 4 tbsp olive oil
* 1 ½ tsp salt
* ½ tsp black pepper
* 1 tsp garlic powder
* 1 tsp paprika
* 1 tsp dried thyme
Garlic Herb Yogurt Dip
Ingredients
* 1 cup Greek yogurt
* 1 clove garlic, finely grated or minced
* 1 tbsp olive oil
* 1 tbsp fresh lemon juice
* 1 tbsp dried dill, finely chopped
* Salt & black pepper, to taste
Mashed potatoes
* 3 large baking potatoes
* Salt and black pepper to taste
* 1 stick butter
* 1 cup heavy cream
