I offset to finish cooking to get to 125. I should’ve pulled at 120 to get closer to rare and medium rare at worst. Will try again next month.

    Try it the other way around next time, offset, then sear.

    Pulling this at 125 will rest up to 140-145, which looks almost exactly where you ended up.

    Rare is literally 120, so how do you figure you’d get a rare roast pulling at 120? Pull at 105 and you’ll get what you want
