(With home grown peppers!) it's by far better than any store bought salsa I've tried!

    If you strain it through a wire mesh strainer, it’ll drain off some of the excess water and is worth the extra step. Looks great though!

    Kinda looks like you didn’t roast the tomatoes, if you want a salsa more like what you buy at the store roast everything except the cilantro. Also canned tomatoes work great as they are always peak ripeness.

    It looks great! If you’re open to some alternatives in a future batch: half the amount of lime + 1 tsp of cumin, 1 tsp of fresh cracked pepper, 1 bell pepper (red, yellow or green) and if you like cilantro replace the parsley with a handful of chopped cilantro.

    This looks wonderful. I hope youll keep making it. For me its a nice release. I usually go with

    4-5 pounds tomato quartered

    10-15 super hot peppers halfed

    2 sweet onions quartered

    Cracked black pepper and salt

    Bake at 300 for 50 minutes to hour and a half stiring once or twice cook till burn starts to show on dish

    Let cool

    Separate onions and peppers in a blender

    Crush the tomatoes

    Blend tough tomatoes, onions and peppers till smooth Add back in

    Add crushed and minced garlic till flavorful

    Add juice of 2 lemons

    Add juice of 6 limes

    Add about half a bushel of diced cilantro

    Add more salt if needed
